  • 1 cup water
  • 3 to 4 fresh rosemary sprigs each about 3 to 4 inches long

Method
 

  1. Gather sugar, water, and fresh rosemary sprigs and have them ready on your counter.
  2. Pour 1 cup water into a small saucepan and add 1 cup granulated sugar.
  3. Place the saucepan over medium heat and stir occasionally until the sugar completely dissolves and the liquid shimmers and steams slightly. Avoid vigorous boiling.
  4. Allow the mixture to reach a gentle simmer with small, steady bubbles.
  5. Carefully add 3 to 4 fresh rosemary sprigs directly into the hot syrup.
  6. Remove the saucepan from heat and let the rosemary steep for 8 to 10 minutes without disturbing it.
  7. Set a fine mesh strainer over a heat-safe bowl or measuring cup and pour the syrup through, discarding rosemary sprigs.
  8. Press gently on the rosemary with the back of a spoon to extract remaining syrup, but avoid squeezing too hard.
  9. Let the strained syrup cool to room temperature before transferring it to a glass jar or bottle for storage.
  10. Seal tightly and refrigerate. Syrup stores up to four weeks in the refrigerator.

Notes

For a more intense rosemary flavor, leave one fresh sprig in the jar while the syrup cools and remove it before chilling completely. Avoid boiling vigorously to prevent crystallization and bitterness. Always cool syrup before storing to prevent glass cracking and condensation.
