Ingredients

Main
  • 4 to 5 pounds baby back ribs about 2 to 3 racks, trimmed
  • 1 cup barbecue sauce your favorite brand or homemade
  • 1/2 cup apple juice or apple cider vinegar
  • 3 tablespoons brown sugar
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper
  • Salt and black pepper to taste
  • 2 tablespoons butter sliced into small pieces

Equipment

  • 6-quart crock pot or larger slow cooker
  • Sharp knife for trimming ribs
  • Cutting board
  • Measuring cups and spoons
  • Small mixing bowl for sauce ingredients
  • Tongs for handling ribs
  • Basting brush (optional, for finishing sauce)
  • Meat thermometer to check doneness

Method

  1. Remove the thin silver skin membrane from the back of the ribs using a sharp knife to ensure maximum tenderness and flavor absorption.
  2. Pat the ribs dry with paper towels, then rub them generously with salt, black pepper, garlic powder, onion powder, smoked paprika, and cayenne pepper.
  3. In a small bowl, whisk together barbecue sauce, apple juice, brown sugar, Worcestershire sauce, and Dijon mustard until smooth and combined.
  4. Pour half of the sauce into the bottom of your crock pot, then arrange the ribs standing upright around the sides or coiled on top of each other.
  5. Pour the remaining sauce over the ribs, then scatter the butter pieces on top.
  6. Cover the crock pot and set it to low heat for 6 to 8 hours, depending on your slow cooker's intensity.
  7. After 6 hours, use tongs to gently pull on a rib bone; if it slides out easily or the meat pulls away cleanly, the ribs are done. If not, cover and cook for another 30 minutes to 1 hour.
  8. For extra caramelization and crispiness, remove the ribs from the crock pot with tongs and place them on a foil-lined baking sheet. Brush with additional barbecue sauce and broil for 3 to 4 minutes until the sauce bubbles and slightly chars.

Notes

Don't skip removing the silver skin membrane for best texture. Let ribs rest in the crock pot for 10 minutes after cooking is complete. Avoid cooking on high heat and opening the lid frequently to maintain moisture and tenderness.
