  • Mascarpone cheese 16 ounces (one pound), at room temperature
  • Powdered sugar 1 1/2 cups, sifted
  • Heavy cream 1/4 cup, cold
  • Vanilla extract 1 teaspoon
  • Fine sea salt 1/8 teaspoon

Method
 

  1. Remove mascarpone from the refrigerator 30 to 45 minutes before you start to bring it to room temperature.
  2. Place powdered sugar in a fine-mesh sieve and sift it directly into a small bowl to remove clumps and aerate the sugar.
  3. Add the room-temperature mascarpone to your mixing bowl and pour the sifted powdered sugar over it.
  4. Using a rubber spatula, fold the mascarpone and powdered sugar together gently until just combined, avoiding overworking the mascarpone.
  5. Turn on your electric mixer to the lowest speed setting and mix for about 30 seconds until the sugar is fully incorporated and no white streaks remain.
  6. Pour the cold heavy cream into the bowl along with the vanilla extract and fine sea salt.
  7. Keep the mixer on low speed and blend for another 30 to 45 seconds until the frosting is smooth, light, and spreadable.
  8. Stop mixing immediately once the frosting holds soft peaks and is creamy; do not overmix to avoid breaking or graininess.
  9. Taste the frosting and adjust vanilla by adding up to an additional 1/4 teaspoon if desired, folding it in gently by hand.
  10. Use frosting immediately for best results or cover tightly and refrigerate for up to 4 hours; allow to sit at room temperature for 10 minutes before spreading if chilled.
