  • 3 cloves garlic minced
  • 2 tablespoons fresh rosemary chopped finely
  • 1 tablespoon fresh thyme chopped
  • 3 tablespoons olive oil divided
  • 1 teaspoon sea salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon red pepper flakes optional
  • 2 tablespoons unsalted butter
  • 2 tablespoons balsamic vinegar
  • 1 lemon cut into wedges for serving

Method
 

  1. Remove the lamb chops from the refrigerator 20 to 30 minutes before cooking to reach room temperature.
  2. In a small bowl, combine minced garlic, fresh rosemary, fresh thyme, sea salt, black pepper, smoked paprika, and red pepper flakes if using.
  3. Use paper towels to pat each lamb chop dry thoroughly on both sides to remove surface moisture.
  4. Rub the seasoning mixture generously all over each lamb chop, working it into the surface with your fingers.
  5. Heat a cast iron skillet or heavy-bottomed stainless steel pan over medium-high heat for 3 to 4 minutes until a droplet of water sizzles and evaporates instantly.
  6. Add 2 tablespoons of olive oil to the hot pan, then place lamb chops in a single layer. Cook in batches if necessary to avoid crowding.
  7. Sear the lamb chops without moving for 3 to 4 minutes until a golden crust forms on the first side.
  8. Flip the chops and sear the other side for another 3 to 4 minutes to reach medium-rare doneness.
  9. Check the internal temperature with an instant-read thermometer; medium-rare is 130 to 135°F (54 to 57°C).
  10. Transfer the seared lamb chops to a warm plate.
  11. Add the butter and balsamic vinegar to the same skillet and swirl together for 30 seconds to create a glossy pan sauce.
  12. Let the lamb rest for 3 to 5 minutes before serving to allow juices to redistribute.
  13. Serve lamb lollipops with lemon wedges alongside your preferred sides.

Notes

Serve immediately after resting for optimal juiciness. Avoid moving the lamb while searing to allow a proper crust to form. Resting the meat ensures tenderness.
