- Spread the lump crab meat on a plate or shallow bowl and carefully pick through it with your fingers to remove any small shell fragments or cartilage. This takes a few minutes.
- Using a sharp knife, mince all six cloves of garlic as finely as possible into small, uniform pieces to ensure even cooking.
- Add the butter and olive oil to a large skillet over medium-high heat and let them heat together for about one minute.
- Add the minced garlic to the hot butter and oil, stirring constantly for about 45 seconds to one minute until golden and fragrant, but not browned.
- Gently fold the prepared crab meat into the pan, stirring carefully to coat it evenly with the garlic butter without breaking apart the lumps.
- Sprinkle salt, black pepper, and red pepper flakes over the crab meat and stir gently to distribute. Taste and adjust seasoning as needed.
- Pour the white wine or seafood stock into the pan and let it simmer for about one minute, stirring gently to deglaze and pick up browned bits.
- Remove the pan from heat and drizzle the fresh lime juice over the crab meat, then scatter the chopped cilantro on top. Serve immediately with lime wedges.

Buy crab meat from a reputable fishmonger and use the same day if possible for best flavor. Keep heat medium-high and avoid stirring too much to preserve lumps of crab meat.
