Method

  2. In another bowl, whisk together 2 large eggs, 1 1/2 cups whole milk, and 1 teaspoon vanilla extract until fully combined for a smooth, lump-free batter.
  3. Pour the wet mixture into the dry ingredients and gently whisk until just combined, stopping as soon as no dry flour streaks remain to avoid tough fries.
  4. Allow the batter to rest at room temperature for 5 minutes to hydrate the flour and activate the baking powder.
  5. Fill a heavy-bottomed pot halfway with oil and heat to exactly 375 degrees Fahrenheit, using a deep-fry thermometer to monitor the temperature.
  6. Pour the batter into a funnel cake maker or squeeze bottle with a narrow tip for better control.
  7. Carefully squeeze batter into the hot oil in 4 to 5 inch long strips, working quickly to ensure the batter puffs and firms up immediately.
  8. Fry the strips undisturbed for 1 to 2 minutes until the bottom is deep golden brown.
  9. Use a slotted spoon to flip each fry carefully and fry the other side for another 1 to 2 minutes until equally golden and crispy.
  10. Remove fries with a slotted spoon and place them on paper towels to drain excess oil, letting them crisp as they cool for about 1 minute.
  11. Keep finished fries warm on a baking sheet in a 200-degree oven while frying remaining batches to serve all hot together.
