Method
 

  1. Pour 1 cup of water and 1 cup of granulated sugar into a small saucepan. Combine before heating to ensure even dissolving and prevent crystallization.
  2. Drop 3 to 4 cinnamon sticks directly into the saucepan.
  3. Place the saucepan over medium-high heat and bring the mixture to a rolling boil, stirring occasionally.
  4. Once boiling, lower the heat to medium and let the syrup simmer gently for 3 to 5 minutes without stirring.
  5. Watch as the syrup shifts from clear to a warm amber or light brown color, signaling that the cinnamon has fully released its flavors.
  6. Remove the saucepan from heat and let it cool for 5 to 10 minutes at room temperature.
  7. Pour the syrup through a fine-mesh strainer into a clean glass jar or bottle, leaving the cinnamon sticks behind.
  8. Allow the syrup to cool completely to room temperature before sealing and storing.

Notes

Keep 1 or 2 cinnamon sticks in your finished syrup jar for continuous flavor infusion and a beautiful visual presentation. Store in a sealed glass jar in the refrigerator for up to 3 weeks. For longer storage, freeze in ice cube trays for up to 3 months. Use true Ceylon cinnamon sticks for a softer, sweeter flavor.
