Method
- Pour 2 tablespoons of olive oil into a large pot and heat over medium heat.
- Add diced onion, carrots, and celery to the pot and sauté for about 5 minutes until vegetables soften and onions become translucent.
- Stir in minced garlic and cook for 1 minute, stirring constantly to prevent burning.
- Pour in 6 cups of low-sodium vegetable or chicken broth and bring to a gentle boil over medium-high heat.
- Add the can of diced tomatoes with their juice, dried Italian seasoning, salt, black pepper, and red pepper flakes if using. Stir to combine.
- Sprinkle in 1 cup of alphabet pasta and stir to prevent sticking.
- Simmer the soup uncovered for 8 to 10 minutes, stirring occasionally, until pasta is tender but not mushy.
- Add 1 cup of fresh spinach and stir for about 1 minute until wilted into the broth.
- Remove soup from heat, garnish with 2 tablespoons fresh chopped parsley, and serve warm.
Notes
Add pasta separately in a bowl of water before stirring into the soup if planning to store leftovers to prevent mushiness. Adjust salt to taste; use fresh herbs like basil or thyme at the end for extra flavor. Serve with crusty bread or grilled cheese sandwiches for best experience.
